Choco-Butterscotch Banana Pops
- 4 medium-size bananas
Plastic straws, cut into 2-inch pieces (or wooden ice cream sticks, etc.)
1/2 cup butterscotch chips,
1/2 cup semisweet chocolate chips
1 tablespoon vegetable shortening (do not use butter, margarine or oil)- Roll-ins:
- Chocolate or colored candy sprinkles
- Finely chopped dry roasted peanuts
- Toasted flaked coconut
- Line a cookie sheet with wax paper.
- Peel bananas and cut into 1-inch pieces.
- Place a straw piece halfway into each banana piece. Place on prepared tray; cover and freeze until firm.
- In small microwave-safe bowl, place butterscotch chips, chocolate chips and shortening. Microwave at HIGH (100%) 1 minute; stir. Continue heating 15 seconds at a time or until mixture is melted and smooth when stirred.
- Covering each banana piece completely, dip banana pieces into butterscotch/chocolate mixture and roll in candy sprinkles, chopped peanuts or toasted coconut as desired. Place back on prepared cookie sheet. Cover; return to freezer until set.
Makes about 1 1/2 dozen snacks.
