Peppermint Pattie Brownies
- 1 1/2 cups butter
3 cups granulated sugar
1 tablespoon vanilla extract
5 large eggs
2 cups all-purpose flour
1 cup unsweetened baking cocoa
1 teaspoon baking powder
1/2 teaspoon salt
24 chocolate-covered peppermint patties candy
- Preheat oven to 350*F. Grease 13 x 9-inch pan.
- In a large bowl, combine melted butter, sugar, and vanilla. Beat in eggs, one at a time, beating well between each addition. Add flour, unsweetened baking cocoa, baking powder, and salt. Pour 1/2 the batter into the prepared pan and cover with peppermint patties candy. Pour the remaining batter on top and bake for 40 to 50 minutes. Toothpick inserted into the center should come out clean. Avoid sticking it into the candy for a more accurate indication of doneness.
- Cool completely before cutting
Makes 24 bars.
