Rocky Road Brownies
- 1 cup (6 ounces) semisweet chocolate chips
- 1 1/2 cups miniature marshmallows
1/2 cup chopped nuts
1/2 cup butter
1 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1/2 cup all-purpose flour
1/3 cup unsweetened baking cocoa
1/2 teaspoon baking powder
1/2 teaspoon salt
- Heat oven to 350°F (175°C). Grease 9-inch square baking pan.
- Stir together chocolate chips, marshmallows and nuts; set aside.
- In a small bowl mix together flour, cocoa, baking powder and salt; set aside.
- In a large microwave-safe bowl, melt butter in microwave at HIGH (100%) for 1 minute or until melted.
- Stir sugar, vanilla and eggs into melted butter until well blended. Add flour mixture and stir until well blended. Spread batter into prepared pan.
- Bake for 23 minutes; remove from oven.
- Sprinkle chocolate chip mixture over top. Bake an additional 5 to 6 minutes or until marshmallows have softened and puffed slightly. Cool completely.
- Cut into squares.
Makes 16 to 20 brownies.
