Pineapple Banana Fritters

1 1/3 cups all-purpose flour
1 1/2 teaspoons baking powder
3 tablespoons granulated sugar
1 teaspoon ground ginger
1/2 teaspoon salt
3/4 cup crushed pineapple, drained
3/4 cup chopped banana
1/2 cup milk
1 large egg, beaten lightly
Vegetable oil for deep-frying
Powdered sugar for dusting
  1. In a small bowl sift together flour, baking powder, sugar, ginger, and salt.
  2. In a bowl combine pineapple, banana, milk, and egg; mixing well. Add the flour mixture; stir batter until just combined.
  3. In Dutch oven or deep fryer, heat 1 1/2-inches of oil to 375*F (190*C).
  4. Drop batter by tablespoonfuls into hot oil in batches, and fry fritters, turning, for 1 to 1 1/2 minutes, or until they are golden. Transfer fritters with slotted spoon to paper towels to drain. Sift powdered sugar over fritters.

Makes about 20 fritters.
