Serve this with a fresh fruit salad and tall glasses of Libbys Kerns nectar for brunch, lunch or a light dinner. Try substituting cooked sausage or bacon for the ham.

Cheesy Pasta Frittata

1 (10-ounce) package STOUFFER'S® One Dish Favorites Fettucini Alfredo, prepared according to package directions
2 large eggs, lightly beaten
1 cup broccoli florets, lightly cooked
1/2 cup diced ham
1/4 cup shredded cheddar cheese
1/4 cup chopped onion
2 tablespoons butter or margarine
  1. Combine fettuccine alfredo, eggs, broccoli, ham, cheese and onion in a large bowl.
  2. Melt butter in a medium nonstick skillet; add pasta mixture, spreading to cover bottom of pan. Cook over medium-low heat, without stirring, for 7 to 12 minutes, or until mixture is set and bottom is golden brown.
  3. Slide onto a plate; cut into wedges.

Makes 4 servings.
