Huckleberry Fritters

1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1 tablespoon baking powder
Pinch of salt
3/4 cup fresh huckleberries
1 large egg, beaten
1 cup milk
  1. Sift together dry ingredients; add berries.
  2. Mix egg and milk and add to dry mixture Mix just until moistened
    Drop batter by tablespoonfuls into deep hot oil (375*F / 190*C). Fry until golden brown, 3 to 4 minutes turning once.
    Drain on paper towels.
  3. Sprinkle with powder sugar and serve warm.

Makes about 2 dozen.
