Peach Muesli With Berries
- 2 cups Quaker® Oats (quick or old fashioned, uncooked)
2 cups coarsely chopped fresh (peeled) or frozen (thawed) peaches
1 1/2 cups apple juice
1 (8-ounce) carton vanilla or peach nonfat yogurt
1/2 teaspoon vanilla extract
1 cup fresh or frozen (thawed) blueberries or raspberries
- In large bowl, combine all ingredients except berries; mix well. Cover and refrigerate for 8 hours or overnight.
- Serve muesli cold topped with berries. Store covered in refrigerator up to four days.
Makes 4 servings.
Tip: To peel fresh peaches easily, place peaches in boiling water for 1 minute. Drain; rinse under cold water to cool. Remove peel with a knife.
