Crunchy, sugary nut brittle makes a great holiday treat.

Microwave Nut Brittle

1 cup granulated sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1 cup chopped nuts
1 teaspoon butter or margarine
1 teaspoon vanilla extract
1 teaspoon baking soda
  1. Combine sugar, corn syrup and salt in a microwave-safe bowl. Microwave on high for 4 minutes. Stir in nuts. Microwave for 3 1/2 minutes on high. Add butter and vanilla. Mix well and microwave on high for 1 1/2 minutes.
  2. Stir in baking soda and beat until no longer foamy. Spread as thinly as possible onto a warm, buttered baking sheet.
  3. Let cool before breaking into chunks.

Makes 24 servings.
