Microwave Pecan Brittle

1 cup granulated sugar
1/2 cup light corn syrup
1/4 teaspoon salt
1 cup pecan halves
1 teaspoon vanilla extract
1 teaspoon butter
1 teaspoon baking soda
  1. In a large microwave-safe, heat-proof bowl combine sugar, light corn syrup, and salt. Cover and microwave on HIGH for 4 minutes.
  2. Add pecan halves and microwave on HIGH another 4 minutes.
  3. Add vanilla and butter and microwave on HIGH for 2 minutes.
  4. Add baking soda and gently stir until foamy.
  5. Pour onto a buttered foil-lined baking sheet. Let cool before breaking into pieces.
  6. Cool before breaking into pieces.

Makes 18 servings.
