Chewy Maple Cookies

1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup vegetable shortening
1 cup firmly packed brown sugar
1 large egg
1/2 cup pure maple syrup
1/2 teaspoon vanilla extract
1 cup sweetened flaked coconut
  1. Preheat oven to 375*F (190*C). Lightly grease baking sheets.
  2. In medium bowl combine flour, baking powder and salt; set aside.
  3. In a mixing bowl, cream shortening and brown sugar until fluffy. Beat in the egg, syrup, and vanilla until well mixed. Stir in flour mixture until just mixed and then stir in coconut.
  4. Drop by tablespoonfuls 2-inches apart onto prepared baking sheets. Bake for 10-12 minutes or until golden brown. Transfer to wire racks to cool. Store in airtight container.

Makes 3 dozen.
