Toffee Crunch Cookies

1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
3/4 cup firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup chopped hard toffee candy or toffee bits
1/3 cup chopped pecans
  1. In a medium bowl combine flour, baking soda, and salt. Set aside. In a large bowl beat butter and brown sugar with an electric mixer on medium speed for 30 seconds. Add egg and vanilla. Beat till thoroughly combined. Stir in the flour mixture,finely chopped toffee candy and finely chopped pecans.
  2. Drop by rounded tablespoonfuls 2 inches apart onto a baking sheet.
  3. Bake at 350*F for 10 to 12 minutes. Remove from baking sheet immediately. Cool on a wire rack.

Makes 24 cookies.
