Garden Turkey Burgers
- 1 cup shredded cabbage
1/4 cup shredded carrots
1 tablespoon minced parsley
1 cup plain nonfat yogurt, divided use
1 teaspoon grainy Dijon-style mustard
1 pound ground turkey breast or extra-lean ground beef
3/4 cup Quaker® Oats (quick or old fashioned, uncooked)
1/4 cup finely chopped onion
1 large garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon ground pepper
4 whole-wheat sandwich rolls
1 cup packed spinach leaves
4 tomato slices
- In medium bowl, combine cabbage, carrots, parsley, 1/2 cup yogurt and mustard; mix well. Cover and chill.
- In large bowl, combine turkey, oats, remaining 1/2 cup yogurt, onion, garlic, salt and pepper; mix lightly but thoroughly. Shape mixture into four 1/2-inch thick patties; place on rack of broiler pan about 4 inches from heat.
- Broil (or grill) 3 to 4 minutes on each side or until instant-read thermometer registers 170°F (160°F for beef).
- To serve, place spinach on roll bottom; top with burger, tomato slice, cabbage mixture and roll top.
