Harvest Pumpkin
Dressing
- 7 slices bacon, cut into
1/2-inch pieces
3 cups toasted bread cubes
1 1/4 cups milk
1 cup QUAKER or AUNT JEMIMA Corn Meal
1 cup chopped pecans
1/2 cup all-purpose flour
1/2 cup firmly packed brown sugar
1 large egg, slightly beaten
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt (optional)
1 (16-ounce) can pumpkin
- In 3-quart microwaveable
casserole, microwave bacon at HIGH 6 minutes or until cooked,
stirring after 3 minutes. Drain, reserving 1/4 cup drippings.
- Add 1/4 cup drippings
and remaining ingredients, except pumpkin; mix well.
- Microwave at HIGH 8 minutes
or until surface appears dry.
- Fold in pumpkin; microwave
2 minutes or until of desired moistness.
- Stir before serving.
- Serve with pork or poultry,
if desired.
Makes 8 servings.
- TIP:
Spoon 1 cup dressing into a 2-cup microwaveable bowl; cover with
plastic wrap. Microwave at HIGH about 1 minute or until heated
through.
