Harvest Thyme Rice
- 1 tablespoon butter or margarine
1 cup thinly sliced carrots
2 tablespoons finely chopped onions
1/2 cup raisins
3/4 cup apple juice
2 tablespoons fresh lemon juice
2 tablespoons light brown sugar
1 teaspoon salt
1 teaspoon finely chopped fresh thyme
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cardamom
3 cups cooked Minute Brown Rice
2 cups sliced apples
1 tablespoon pine nuts, toasted
- Melt butter in large skillet on medium heat. Add carrots and onions; cook and stir 5 minutes or until crisp-tender.
- Add raisins, juices, sugar and seasonings; mix well. Reduce heat to low; cover. Simmer 10 minutes.
- Stir in rice and apples; cook until heated through, stirring occasionally.
- Sprinkle with pine nuts.
Makes 6 servings.
Great Substitute:
Substitute 1/4 teaspoon dried thyme leaves for the 1 teaspoon fresh thyme.Great Substitute:
