New Year's Eve Party Ball
- 1 (8-ounce) package cream cheese
2 cups sharp cheddar cheese, shredded
1 (1-ounce) package ranch dressing mix- 6 large hard-cooked eggs, diced
1 cup pecan pieces
1/2 cup fresh parsley, chopped
1/2 cup red pepper, diced
- In a large bowl, mix together cream cheese, cheddar cheese, ranch dressing mix and hard-cooked eggs. Use your hands to form into two balls and set aside.
- Mix pecans, parsley, and red pepper together in separate bowl. Roll each ball in the mixture until covered.
- Refrigerate for at least 2 hours. Serve with crackers.
Makes 2 party balls.
