Lamb Baked in Paper
- 3 pounds lamb shanks, sliced
2 garlic cloves
2 ounces feta cheese
2 lemons
1 teaspoon dried thyme
1 teaspoon dried mint leaves
1 teaspoon dried oregano leaves
1 tablespoon salt
1/2 teaspoon pepper
1 package parchment paper
- Pat dry sliced lamb. Cut slits with a small, sharp knife on all sides. Insert pieces of garlic cloves and feta cheese. Rub with the juice from lemons. Sprinkle with thyme, mint, oregano, salt, and pepper.
- Wrap in cooking parchment paper and tie with string.
- Bake for 2 1/2 hours in a 350*F (175*C) oven, or until done.
Makes 6 servings.
