Lamb Baked in Paper

3 pounds lamb shanks, sliced
2 garlic cloves
2 ounces feta cheese
2 lemons
1 teaspoon dried thyme
1 teaspoon dried mint leaves
1 teaspoon dried oregano leaves
1 tablespoon salt
1/2 teaspoon pepper
1 package parchment paper
  1. Pat dry sliced lamb. Cut slits with a small, sharp knife on all sides. Insert pieces of garlic cloves and feta cheese. Rub with the juice from lemons. Sprinkle with thyme, mint, oregano, salt, and pepper.
  2. Wrap in cooking parchment paper and tie with string.
  3. Bake for 2 1/2 hours in a 350*F (175*C) oven, or until done.

Makes 6 servings.
