A low carb, modest sodium recipe.

Chicken Vera Cruz

4 teaspoon (20mL) Mrs. Dash® Tomato Basil Garlic Seasoning Blend, divided use
2 tablespoons (30mL) olive oil
1 large shallot, finely chopped (about 2 Tbsp.) (30mL)
1 pound (454g), skinless chicken breast halves
1/3 cup (80mL) low sodium chicken broth
1 tablespoons. (15mL) no salt added, tomato paste
2 tablespoons (30mL) sliced Spanish olives
  1. Heat oil in a large nonstick skillet over medium heat.
  2. Add shallots and cook for 1 minute.
  3. Add chicken and sprinkle with 2 teaspoons (10mL) Mrs. Dash° Tomato Basil Garlic.
  4. Cook over medium heat for 4 minutes; turn chicken over and sprinkle with remaining Mrs. Dash® Tomato Basil Garlic.
  5. Cook for 4 more minutes or until chicken reaches 170°F (77°C) in the center.
  6. Remove from skillet and keep warm.
  7. Add chicken broth and tomato paste to juices in skillet.
  8. Cook and stir over high heat until mixture comes to boiling; boil and stir for 1 minute.
  9. Stir in olives and pour over chicken.
  10. Serve immediately.
