A low carb, modest sodium recipe.
Chicken Vera Cruz
- 4 teaspoon (20mL) Mrs. Dash® Tomato Basil Garlic Seasoning Blend, divided use
2 tablespoons (30mL) olive oil
1 large shallot, finely chopped (about 2 Tbsp.) (30mL)
1 pound (454g), skinless chicken breast halves
1/3 cup (80mL) low sodium chicken broth
1 tablespoons. (15mL) no salt added, tomato paste
2 tablespoons (30mL) sliced Spanish olives
- Heat oil in a large nonstick skillet over medium heat.
- Add shallots and cook for 1 minute.
- Add chicken and sprinkle with 2 teaspoons (10mL) Mrs. Dash° Tomato Basil Garlic.
- Cook over medium heat for 4 minutes; turn chicken over and sprinkle with remaining Mrs. Dash® Tomato Basil Garlic.
- Cook for 4 more minutes or until chicken reaches 170°F (77°C) in the center.
- Remove from skillet and keep warm.
- Add chicken broth and tomato paste to juices in skillet.
- Cook and stir over high heat until mixture comes to boiling; boil and stir for 1 minute.
- Stir in olives and pour over chicken.
- Serve immediately.
