A low potassium, modest sodium recipe.

Chicken with Apples and Blue Cheese

2 cups (480mL) reduced-sodium chicken broth
4 teaspoons (20mL) Mrs. Dash® Original Blend, divided use
2 cups (480mL) instant white rice
1 1/4 pounds (600g) boneless, skinless chicken thighs, trimmed of excess fat
1/2 onion, chopped
1 Granny Smith apple, peeled, cored and sliced
1/2 cup (120mL) dry white wine or chicken broth
2 tablespoons (30mL) finely crumbled blue cheese
  1. Put the broth and 1 tsp (5mL) of the Mrs. Dash® Original Blend into a medium saucepan.
  2. Bring to a boil over high heat. Stir in the rice, cover and remove from the heat. Let stand for 5 minutes or until the liquid is absorbed.
  3. Meanwhile, coat a large, deep nonstick skillet with cooking spray and heat over medium-high heat.
  4. Sprinkle chicken with 2 tsp (10mL)of the remaining Mrs. Dash® and add to hot pan, smooth-side down.
  5. Reduce heat to medium and cook 4 to 6 minutes per side or until no longer pink in center (160°F on an instant read thermometer). Transfer to platter or plates and cover with foil to keep warm.
  6. Add the onions and apples to pan and cook, stirring, for 2 minutes. Add the broth and the 1 tsp (5mL)Mrs. Dash® Original Blend.
  7. Reduce heat to medium-low, cover, and simmer 2 minutes or until the apples are tender.
  8. Add any accumulated juices from the chicken platter or plates and cook 1 minute. Serve sauce with chicken and sprinkle with cheese.
  9. Fluff rice with a fork and serve alongside.
