California Fresh Asparagus
Casserole
- 1 1/2 cup water
1 1/2 cup chicken stock
1 teaspoon salt
- 1 pound asparagus
2 tablespoons butter
1 small onion, finely chopped
3 cloves garlic, minced
1 cup uncooked long grain rice
1/2 cup diced red bell pepper
1/2 cup freshly grated Parmesan cheese
- Mix all ingredients, pour into a greased
2-quart casserole and cover.
- Bake in oven at 400*F (205*C) for 20 minutes.
Stir and then bake another 20 minutes.
Makes 4 to 6 servings.
