Tortellini is a warming, homey dish just right for cold, blustery days. Simmered with bits of zucchini and chunks of tomato, this zesty and filling dish is dressed with grated Parmesan. Serve with fresh focaccia bread.
Cheese Tortellini in Savory Broth
- 7 cups water
6 cubes MAGGI® Chicken Bouillon Cubes
1(9-ounce) package BUITONI® Three Cheese Tortellini
1 medium zucchini, unpeeled and shredded
1 medium tomato, seeded and chopped
1/4 cup freshly grated Parmesan cheese- Freshly ground black pepper
- Boil water and bouillon in stockpot. Stir in pasta; cook for 5 to 6 minutes. Reduce heat to low; stir in zucchini and tomato. Cook until vegetables are heated through.
- Sprinkle with cheese before serving. Season with ground black pepper.
