Jamaican jerk seasoning gives grilled pork a delectable spicy-sweet flavor. Look for jerk in the seasoning section of large supermarkets.
Jamaican Pork with Melon Salsa 1 cup chopped honeydew melon
1 cup chopped cantaloupe
1 tablespoon snipped fresh mint
1 tablespoon honey
4 boneless pork loin chops, cut 3/4 to 1-inch thick
4 teaspoons Jamaican jerk seasoning
Fresh mint leaves (optional)
2 tablespoons snipped fresh cilantro or mint
1 tablespoon granulated sugar
1/8 teaspoon ground white pepper
4 cups shredded leaf lettuce
- For melon salsa, in a small bowl, stir together the chopped honeydew, cantaloupe, 1 tablespoon mint, and honey. Cover and refrigerate until ready to serve.
- Trim fat from pork chops. Rub both sides of chops with jerk seasoning. Grill chops on the rack of an uncovered grill directly over medium coals for 8 to 12 minutes or until chops are slightly pink in center and juices run clear, turning once. Serve salsa with chops. Garnish with additional mint, if desired.
