Serve on toasted buns with mayonnaise,
lettuce and sliced tomatoes.
Chicken Burgers
- 2 cups chopped cooked chicken (or turkey)
- 1/2 cup seasoned breadcrumbs
- 1/4 cup finely minced onion
- 2 eggs
- Salt and freshly ground pepper to taste
- 2 to 3 tablespoons vegetable oil
- Combine chicken, breadcrumbs, onion and
eggs in medium bowl and blend well. Season with salt and pepper.
Cover and refrigerate until ready to use.
- Form chicken mixture into 6 patties. Heat
oil in skillet over medium-high heat. Add patties and fry until
browned, turning once.
Makes 6 servings.
