
Jalapeños and nectarines blend beautifully
with avocado, green onion, garlic and cilantro to create a tangy
and luscious guacamole just right for serving with succulent
chicken breast just off the grill.
Grilled Chicken
with Nectarine Guacamole
- 2 nectarines or peaches,
pitted and coarsely chopped
1 medium avocado, pitted, peeled and chopped
2 large green onions, finely chopped
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime or orange juice
1 tablespoon to 2 ORTEGA® Diced Jalapeños
1 clove large garlic, finely chopped
1/4 teaspoon salt
4 boneless, skinless chicken breast halves
- Combine nectarines, avocado,
green onions, cilantro, lime juice, jalapeños, garlic
and salt in medium bowl. Refrigerate for 1 hour before serving.
- Grill or broil chicken
until no longer pink in center. Top with nectarine guacamole.
