Lemon Marinade Chicken

1 cut-up chicken
3/4 cup extra virgin olive oil
1/2 cup fresh lemon juice
1 teaspoon Worcestershire sauce
1 small onion, chopped
1 large clove garlic, finely minced
1 teaspoon salt
3/4 teaspoon ground thyme
1/4 teaspoon mace
1/4 teaspoon freshly ground pepper
  1. In medium glass bowl, place olive oil, lemon juice, Worcestershire sauce, onion, garlic, salt, thyme, mace and pepper. Stir to mix well. Place chicken in large zip-closure bag and pour marinade over chicken, turning to coat well. Place in refrigerator and marinate at lease 30 minutes or overnight, if desired.
  2. Remove chicken from marinade and place on prepared grill, smaller pieces around edge. Grill, turning once, about 15 minutes on each side or until fork can be inserted in chicken with ease. (Note: marinated chicken may also be broiled, roasted or even fried. Select parts of chicken may also be used).
