This is a versatile dish, offering a savory way to prepare rice and poultry, including turkey. Just combine these items with beaten eggs, milk and top with zesty grated cheeses. Tomato, onion and bell pepper add taste and crunch.

Turkey and Rice Quiche

3 cups cooked rice
3 cups diced cooked turkey
1 tomato, seeded and diced
1/4 cup sliced green onion
1/4 cup diced green bell pepper
1 teaspoon crushed basil
1/2 teaspoon seasoned salt
1/8 teaspoon cayenne pepper
1/2 cup milk
3 large eggs, beaten
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
  1. Preheat oven to 350°F. Lightly spray an 11 x 7 x 2-inch baking dish with vegetable cooking spray; set aside.. Combine rice, turkey, tomato, green onion, green bell pepper, basil, seasoned salt, cayenne pepper, milk and beaten eggs in a large bowl; mix thoroughly.
  2. Pour into prepared baking dish; bake for about 25 minutes or until center is nearly set. Open oven; sprinkle with cheddar cheese and mozzarella cheese on top. Return to oven; bake an additional 2 minutes or until cheese is melted.
  3. Remove from oven; allow to sit about 5 minutes before serving to allow mixture to set. Serve warm; otherwise refrigerate until ready to serve.

Makes 6 servings.
