Fat Free Jell-O® & Juice Mold

2 1/2 cups boiling water
1 (6-ounce) package or 2 (3.25-ounce each) packages Jell-O Brand Strawberry Flavor Sugar Free Low Calorie Gelatin
1 cup cold orange juice
1 (8-ounce) can pineapple chunks in juice, drained
1 (11-ounce) can mandarin orange segments, drained
  1. Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Stir in juice. Refrigerate about 1 1/2 hours or until thickened (spoon drawn through leaves definite impression).
  2. Stir in fruit. Spoon into 6-cup mold sprayed with cooking spray.
  3. Refrigerate 4 hours or until firm. Unmold.

Makes 10 servings.
