Rice Pilaf Salad
- 3/4 cup brown rice
2 cups chopped cooked turkey
1 cup canned garbanzo beans, rinsed and drained
1 cup canned kidney beans, rinsed and drained
2 apples, cored and chopped
1/2 cup sliced celery
1 green bell pepper, seeded and chopped
1/2 cup sliced green olives
1/4 cup sliced green onion
1/4 cup chopped flat-leaf parsley
1 cup (8 ounces) French salad dressing
- Cook brown rice according to package directions.
- In a large bowl combine together chopped turkey, brown rice, garbanzo beans, kidney beans, chopped apples, sliced celery, chopped green bell pepper, sliced green olives, sliced green onion, and chopped parsley. Toss together and chill. Just before serving, pour french salad dressing over the salad.
Makes 5 servings.
