This fresh take on tacos can also be prepared with ground beef.

Cheesy Chicken Tacos

1 tablespoon butter or margarine
1 pound ground chicken
1/2 cup taco sauce
6 ounces cheddar cheese, cubed
10 taco shells
Shredded lettuce
Sour Cream
Chopped tomato
  1. In 10-inch skillet melt butter until sizzling; add ground chicken. Cook over medium-high heat, stirring occasionally, until chicken is no longer pink (5 to 7 minutes). Stir in taco sauce. Continue cooking until mixture just comes to a boil (2 to 3 minutes).
  2. Add cheese. Cover; remove from heat. Let stand until cheese is melted (3 minutes). Stir in cheese.
  3. Meanwhile, warm taco shells as directed on package. Spoon about 2 tablespoons chicken mixture into each shell. Serve with lettuce, sour cream and tomato.
