Shrimp and scallops are bathed in a simple butter sauce flavored with garlic and basil. A handful of cherry tomatoes adds color and a juicy contrast to the rich seafood and sauce. This will become your new dinner party standby!
Microwave Garlic and Basil-Buttered Seafood 12 ounces linguine
3/4 pound scallops
3/4 pound shrimp, peeled and deveined
1/3 cup butter
2 cloves garlic, crushed
1 tablespoon chopped fresh basil
1/4 teaspoon salt
1 cup cherry tomatoes, halved
- Cook linguine according to package directions; drain.
- Meanwhile, rinse scallops and shrimp; pat dry.
- In a microwave-safe baking dish combine butter and garlic. Heat on HIGH for 1 minute or until butter is melted.
- Add basil, salt, shrimp and scallops and toss until evenly coated with the butter mixture. Cover and microwave on HIGH for 2 minutes.
- Add cherry tomatoes and microwave on HIGH for 1 minute. Serve over pasta.
Makes 6 servings.
