Microwaved Lutefisk

2 to 3 pounds thawed lutefisk
Ground allspice
Salt
White pepper
Melted butter, if desired
White Sauce, if desired (recipe follows)
  1. Arrange thawed lutefisk on roasting rack. Cover with waxed paper.
  2. Microwave on high setting 5 to 7 minutes, until fish flakes easily.
  3. Rearrange fish after half the cooking time.
  4. Sprinkle with allspice, salt and pepper to taste.
  5. Serve with melted butter or White Sauce, as desired.
White Sauce:

2 tablespoons butter
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon white pepper
1 cup milk
  1. Melt butter in saucepan over low heat. Blend in flour, salt and pepper. Cook over low heat, stirring until mixture is smooth.
  2. Stir in milk, bring to a boil and cook for 1 minute.

Serves 2 to 3.
