This is a very flavorful hearty chowder made quicker and easier thanks to convenience foods.
Cheesy Broccoli Chicken Chowder
- 1 (40-ounce) package STOUFFER'S® Family Style Favorites Broccoli au Gratin
2 (11 1/2-ounce) packages STOUFFER'S® Scalloped Potatoes
4 skinned and boned chicken breast halves, cut into bite-size pieces
1/2 cup all-purpose flour
1 large sweet onion, diced
2 large celery ribs, diced
2 carrots, peeled and chopped
1/2 teaspoon ground black pepper
1/4 cup vegetable oil
5 cups chicken broth
1 1/2 cups shredded cheddar cheese, divided use
- Thaw broccoli au gratin in refrigerator overnight.
- Thaw scalloped potatoes in microwave at MEDIUM (50% power) 5 to 6 minutes.
- Coat chicken with flour.
- Saute onion and next 3 ingredients in hot oil in a Dutch oven medium-high heat 5 minutes. Add chicken; saute 5 minutes. Gradually add broth, stirring constantly.
- Bring bring to a boil; reduce heat to low, and simmer, stirring often, 20 minutes. Stir in broccoli au gratin, scalloped potatoes, and 1 cup cheese; cook until thoroughly heated. Sprinkle each sewing evenly with remaining 1/2 cup cheese.
Makes 3 quarts.
