Chili Soup 3 pounds coarsely ground beef
6 tablespoons chili powder
1 tablespoon dried oregano
1 tablespoon ground cumin
1 tablespoon salt
1/2 teaspoon cayenne pepper
2 garlic cloves, crushed
1 teaspoon liquid hot pepper sauce
6 cups water
1/4 cup white cornmeal
- In a kettle, brown coarsely ground beef; drain. Add chili powder, oregano, cumin, salt, cayenne pepper, crushed garlic cloves, liquid hot pepper sauce, and water. Heat to a boil, reduce the heat, cover, and simmer for 1 1/2 hours. Skim off any fat. Stir in white cornmeal and simmer uncovered for 30 minutes, stirring occasionally.
Makes 6 servings.
