A simmering pot of soup is a guarantee that everyone will be on time for dinner. This is a fantastic first course for your next get-together, or add garlic bread and a ready-to-serve salad for a quick and satisfying meal.

Double Chicken Tortellini Soup

5 (14.5-ounce) cans chicken broth
1 1/2 cups loose-pack frozen corn
1 (14.5-ounce) can Italian-style diced tomatoes, undrained
1 (8-ounce) package BUITONI® Herb Chicken Tortellini
2 1/2 cups cooked shredded chicken
1/4 cup freshly grated Parmesan cheese
2 tablespoons sliced green onion
  1. Combine chicken broth, corn and tomatoes with juice in large saucepan. Bring to a boil over medium-high heat.
  2. Add pasta and chicken; reduce heat to medium. Cook, stirring occasionally, for 10 minutes or until pasta is tender. Season with salt and ground black pepper. Serve with cheese and green onion.

Makes 8 servings.
