Southwestern Meatball Soup

3/4 pound ground beef
3/4 pound ground pork
1/3 cup uncooked rice
1 large egg
1 teaspoon dried oregano
1 teaspoon salt
1/4 teaspoon ground black pepper
1 onion, chopped
1 garlic clove, crushed
2 tablespoons vegetable oil
1/2 cup tomato paste
10 cups beef broth
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup chopped flat-leaf parsley

  1. In a large bowl combine ground beef, ground pork, rice (uncooked), egg, oregano, salt, and pepper. Shape into small balls, about 1-inch in diameter.
  2. In a skillet saute until tender, chopped onion and crushed garlic clove in heated oil. Mix in tomato paste, beef broth, salt, and pepper. Bring to a boil then add the meatballs. Reduce the heat and cook slowly, covered, for about 30 minutes, or until the meatballs are cooked. Stir in chopped parsley.

Makes 12 servings.
