Everyone has their favorite seafood, so this recipe is quick and easy to customize for your family. Serve with tortilla chips for a light lunch, or as an appetizer to start off your favorite Mexican meal.

Texicali Seafood Soup

1 (10.75-ounce) can condensed tomato soup
1 cup water
1 (4-ounce) can diced green chilies
1/2 cup frozen corn
1/2 cup chopped onion
1/2 cup cooked rice
3/4 cup cooked seafood of choice
1/2 teaspoon chili powder
Chopped fresh cilantro for garnish
  1. Combine soup, water, chiles, corn, onion, rice and chili powder in medium saucepan. Bring to a boil; reduce heat to low. Cook, covered for 5 minutes.
  2. Add seafood; cook for 2 to 3 minutes or until hot. Garnish with cilantro.

Makes 4 servings.
