What cheese would best replace blue cheese?
Q: I got today's recipe ( from The Daily Recipe,
the enewsletter of CooksRecipes.com) for Blue
Cheese-Stuffed Steak With Sauteed Mushrooms. Is there another
cheese that would work well?
A: Gorgonzola and Roquefort cheese would be the most
obvious substitutes, but I'm guessing that you are asking for
something less obvious that would substitute nicely for blue
cheese. You might consider the rich and tangy taste of crumbled
feta, or perhaps the milder tartness of goat (chèvre)
cheese might be more preferable. Also a crumbly, aged cheddar
cheese, which pairs very well with beef, would be another good
choice.
