What can I make with chicken,
rice, frozen veggies and canned soup?
Q: Dear Hope, In my freezer I have frozen chicken
breast, California vegetables (broccoli, cauliflower, & carrots),
in my cupboard I have rice and cream of chicken and cream of
mushroom soup as well as a can of mushrooms. HELP!! I need an
easy recipe.
A: Sounds like you have the makings of an easy, "one-dish-meal"
casserole. Below is a link to a basic chicken and rice casserole
here at CooksRecipes.com that can be used as a base recipe with
the ingredients you have on hand--including the veggies which
can be added even though they are not called for. Simply thaw
and add them to the soup/rice mixture. And, if you don't have
the packet of dry onion soup mix, which is used for flavoring,
then improvise--saute some chopped onion in butter until nicely
caramelized (golden in color) and add the flavorful mixture to
your very own personal casserole creation.
