Can cocoa be substituted for chocolate?
Q: A recipe calls for 1 ounce square chocolate but
I only have unsweetened cocoa. Can I substitute and, if so, how
much cocoa?
A: Yes, unsweetened cocoa (a.k.a. baking cocoa) can
be used as a substitute for unsweetened chocolate.
3 tablespoons unsweetened cocoa
plus 1 tablespoon vegetable shortening* equals 1 ounce (or 1
square) of unsweetened chocolate.
*You can also use butter or vegetable
oil, but shortening is best as it is a solid (unlike oil) and
does not contain water as does butter.
