Q: How do you keep a pie crust from sliding down the
side of the pie plate while cooking? Frances Snyder
A: I am fairly sure you are asking about a single
pie crust that is baked prior to filling. First, be sure to roll
out the pie dough large enough to fit the pie plate, because
stretching and pulling the dough to fit the plate will cause
the dough to shrink as it bakes. Also, once the dough has been
placed in the plate, it helps to place the unbaked pie crust
in the refrigerator for several minutes so the dough can "relax"
a bit before baking.
