How do I prevent frosting
from getting "tacky" outdoors?
Q: I am making a sheet cake for a football tailgate
party. The question is: Most frostings get 'tacky' or soften
when outdoors, temperature will be in 60's, hence the question:
What to add to stiffen frosting so it won't run? Thank you!
A: There is a specialty product
called "Dr. Oetker Whip It" that is used to stabilize
whipped cream, which can also be used to stabilize frosting as
well. It can purchased online at AmanaShops.com.
You can also add a teaspoon or
so of cornstarch to frosting to act as a stabilizer. Powdered
sugar contains cornstarch for this very reason.
