Why are purchased bran muffins darker?
Purchased Bran muffins are dark in color. Recipes for bran muffins do not have ingredients that make the muffin dark. What ingredient needs to be added? I prefer the dark color and taste of purchased muffins but would to bake my own. Any suggestions?
ANSWER:
If the bran muffins you purchase are darker in color than the ones you make, they were probably made with dark molasses or dark brown sugar, or a combination of both. Plus, the flour used in combination with the bran is most likely whole wheat flour, rather than all-purpose flour. Any combination of these ingredients would contribute to a darker bran muffin.
