Frequently Asked Questions
QUESTION:
Baking a cheesecake at high altitude.
Hope, I'm making a cheesecake, is there anything different I need to do when I'm cooking at high altitude? I'm at 8,000 feet. Thanks, Dan.
ANSWER:
Unless specified by the recipe itself, there should be no reason to adjust a cheesecake recipe when preparing it at a high altitude, other than the fact that a slight increase in baking time might be necessary.
Do be aware that baking times are not always exact, due to variations in oven temperatures. A perfectly baked cheesecake will be puffed around the edges, yet the center should be slightly moist and jiggly. Unless otherwise directed by your recipe, turn the oven off and allow cheesecake to remain in oven, with the door ajar, for 30 minutes or until center is completely set. Remove from the oven and cool completely on a wire rack away from drafts before refrigerating.
