Difficulty making Cream Cheese Icing in Africa.
We are in Africa as missionaries and trying to make cake icing using cream cheese and icing sugar. The problem is that it is Africa's cream cheese and not Philidelphia's, and it is more runny. What can we do to thicken up the icing. We already have added extra boxes of icing sugar.

To make it work, you might try reducing the amount of cream cheese used and the milk or water called for in your recipe, plus increase the butter (if called for or add it to replace the omitted cream cheese). Then, if necessary, increase the icing sugar until you get the right consistency. Also, adding a teaspoon of cornstarch may also help to stabilize the icing.
