ANSWER:
It is claimed that a peeled and sliced potato dropped into the pot will absorb the excess salt, but tests have proven this theory not to be the case as any salt absorbed is minimal. You can add a tablespoon of vinegar, which may help to counter the saltiness.
Another option would be to extend the amount of the chili, stew and or soup by adding more salt-free ingredients (canned tomatoes, tomato sauce, more veggies, etc.). Yes, you'll have more servings, but leftovers can be frozen for another day.
