Can cocoa be substituted for chocolate?
A recipe calls for 1 ounce square chocolate but I only have unsweetened cocoa. Can I substitute and, if so, how much cocoa?
ANSWER:
Yes, unsweetened cocoa powder (baking cocoa) can be used as a substitute for unsweetened chocolate.
3 tablespoons unsweetened cocoa plus 1 tablespoon vegetable shortening equals 1 ounce (or 1 square) of unsweetened chocolate.
Note: You can also use butter or vegetable oil, instead of shortening, but shortening is best as it is a solid (unlike oil) and does not contain water like butter has.
