How do I prevent frosting from getting "tacky" outdoors?
I am making a sheet cake for a football tailgate party. The question is: Most frostings get 'tacky' or soften when outdoors, temperature will be in 60's, hence the question: What to add to stiffen frosting so it won't run? Thank you!
ANSWER:
There is a specialty product called "Dr. Oetker Whip It" that is used to stabilize whipped cream, which can also be used to stabilize frosting as well.
You can also add a teaspoon or so of cornstarch to frosting to act as a stabilizer. Powdered sugar contains cornstarch for this very reason.
