Black Bean Appetizer

1 pound dry black beans
1/2 cup chopped onion
3 garlic cloves, crushed
1 teaspoon salt
1/4 cup chopped fresh cilantro
1 pound tortilla chips
  1. Sort dry black beans and soak overnight covered with water in a stockpot.
  2. Drain soaking water, refill stockpot with fresh water, and bring to a boil. Reduce heat and simmer, covered, for 1 hour. Add onion, garlic and salt. Cook for 2 hours, or until thick. Sprinkle with cilantro. Serve with tortilla chips.

Makes 16 servings.
