Blue Cheese Walnut Wafers

Blue Cheese Walnut WafersThese nutty blue cheese wafers are great served as an appetizer, snack or with soup.

Recipe Ingredients:

1 cup (5 ounces) crumbled Wisconsin Blue cheese, room temperature
1/4 cup (1/2 stick) butter in pieces, at room temperature
1 cup all-purpose flour
1 cup finely chopped walnut

Cooking Directions:

  1. Cream the Blue cheese and butter with an electric mixer until fluffy. Mix in flour and walnuts thoroughly.
  2. Form into a log about 2 inches in diameter and 12 inches long. Wrap in plastic wrap and chill for at least 1 hour or overnight.
  3. Preheat oven to 375ºF (190ºC).
    Cut log into slices 1/4 inch thick. Place slices 1/2 inch apart on baking sheets.
  4. Bake for 12 to 14 minutes. Watch closely. Bake just until bottoms are lightly browned. Cool on wire racks. Store in air tight containers.

Makes 4 dozen.
