Brochette with Caramelized Leeks and Feta Cheese

Brochette with Caramelized Leeks and Feta CheeseCaramelized leeks and feta cheese are spooned atop toasted French bread slices and broiled to perfection. Recipe by Chef Judy Gilliard.

Recipe Ingredients:

1 tablespoon butter
1 cup leeks, washed thoroughly and sliced 1/4-inch thick
Salt and ground black pepper, to taste
2/3 cup (4 ounces) Wisconsin Feta Cheese
8 slices French baguette, toasted

Cooking Directions:

  1. Heat butter in skillet over medium heat. Add leeks, salt and pepper; cook until leeks are caramelized. Remove from heat.
  2. Stir in cheese. Spoon evenly on toast slices.
  3. Preheat broiler and broil 3 minutes or until cheese is soft and hot.

Makes 8 servings.
