Shake up your salsa with mangos. This salsa is a combination of sweet and spicy. Serve on Spicy Pork Quesadillas, Shredded Pork Tacos or simply with tortilla chips.

Mango Salsa

2 to 3 ripe mangoes, chopped
1 jalapeno chile, seeded and minced *
1/4 cup minced red onion
4 tablespoons chopped fresh cilantro
2 tablespoons cider vinegar
Salt, to taste
  1. Stir together all ingredients in medium bowl until well blended. Cover and refrigerate until ready to serve. Serve cold or at room temperature.

Makes about 1 1/2 cups.

*When handling hot peppers, wear rubber gloves to protect the skin.
